Ingredients:

2 x Medium free-range eggs
1 tsp Olive oil
60ml Pro-cal shot neutral (1/2 bottle)
50g Spinach
25g Parmesan cheese, grated
Pinch of salt and pepper

Method:

1 Whisk the eggs with the Pro-Cal shot in small bowl, season with salt and pepper.

2 Heat the oil in a non-stick pan and add in the spinach. Cook for one minute until wilted, stir occasionally.

3 Add the eggs to the pan, continue to stir for a further minute until they are just set.

4 Stir in the Parmesan cheese.
