150g butter
700g Pudding rice (or Spanish paella rice)
300g (20 x 15g) Pro-Cal powder
6000ml Whole milk
1 tsp Vanilla extract
1 tsp Grated nutmeg
550g Caster sugar


1 Preheat oven to 200C/fan 180C/gas mark 6.

2 Melt the butter in the casserole dish over a medium heat. Add the rice and stir to coat.

3 Add Pro-Cal powder to 500ml of whole milk and mix well, then add to casserole dish.

4 Gradually add remaining milk to the casserole dish and stir continuously. Add vanilla extract and nutmeg and simmer.

5 Bake in the oven for 1½ hours, stirring occasionally. After 1 hour, stir in the sugar and cover with foil.
