Ingredients:

10 Medium onions, peeled & chopped
8 Cloves of garlic, crushed
12 Medium leeks, diced
10 Large potatoes, peeled & diced
12 Medium carrots, peeled & diced
Knob of butter
4500ml Vegetable stock
4500ml Whole milk
270g (18 x 15g) Pro-Cal powder
Mixed herbs and seasoning to taste

Method:

1 Place onions, garlic, leeks, potatoes and carrots into a large pan with butter over medium heat until softened (approx. 10 to 15 minutes).

2 Add the vegetable stock and milk to the pan and simmer for approx. 45 minutes.

3 Add Pro-Cal powder, herbs and seasoning to pan, mix thoroughly and cook for a further 10 minutes.

4 If preferred, use a hand blender to achieve desired consistency, then heat through once more.

5 Serve with fresh buttered bread.
